Milk   490
Vanilla Bean   1
Honey 40 50
Confectioners Sugar 140 175
Eggs 72 90
Yolks 24 30
Aged Rum 12 15
Cold Melted Butter 40 50
Bread Flour 100 125

Method:

  • Boil milk and vanilla bean and then chill to infuse overnight.
  • Whisk together and mature 24 hours.
  • Grease pans with equal parts beeswax and butter and chill.
  • Stir mixture before each use.
  • Fill leaving 2 cm at top
  • Bake 385° convection F for 30 minutes or until very dark.
